It is the hardest job in the world

I often hear about getting rid of the "iron grip" of unions,however, who’s to say my job would become safer, or that I would be guaranteed a living wage?
If left to the employer, their job is to make as much money as possible, so even if I do a good job I am still at the mercy of the lowest bidder, which means my pay scale is also at the mercy of the cheapest employee. So how does getting rid of unions help?
